Pour the snails into a colander to remove the oil.

In the PLANCHA OR PAELLA: Pour in the oil until the bottom is covered. Heat on medium heat and then pour in the cooked snails and cover them. Season to taste or add sauce. Stir well for 5 minutes.

In the OVEN: Preheat the oven to 170º. Once hot, place the cooked snails in the oven and season to taste with oil, pepper, cayenne... or with sauce, aioli or sea salt.
