We exclusively produce cooked snails and snail sauces.
The snails are purged inside snail shells for more than a week in fasting and are carefully cleaned and selected for size and hardness.
Cooking is done with oil macerated with spices and aromatic plants *, salted water and cayenne for more than 90 minutes at a controlled temperature, thus achieving a snail that is mellow in the mouth and tasty to the most demanding palates.
* The species and aromatic plants are grown on our farm (registration number: VP / P / 1774/2015), in flowerbeds exclusively for their cultivation and growth. We do not use any herbicides or pesticides and are free of chemical contagion. We also practice integrated production, thus closing the production cycle.
