Snails with garlic sausage

The Garlic Fair is one of the most representative festivals of our town, Cornellà del Terri, where everything revolves around garlic. One of the most characteristic products is the "botifall", a sausage seasoned with garlic. Do you want to try it?

In order to prepare the snails with botifall, we need the following condiments:

  • A 180 g bag of refrigerated snails or a 180 g bag of VdeGust canned snails.
  • A botifall, or rather, a sausage with garlic
  • One large Figueres onion or two small ones
  • A pinch of salt
  • Three cloves of black garlic
  • Extra Virgin Olive Oil (EVOO)

If you can't find any butcher's shops that carry sausage with garlic, you can use an ordinary sausage and add more garlic to the recipe.


  • First of all, cut the onion and put it in the frying pan with a base of oil.
  • Once the onion is golden brown, chop the sausage into small pieces and add it to the pan.
  • Then add the black garlic cloves.
  • When all the ingredients are cooked and mixed, add the VdeGust snails for about 5 minutes ... and that's it!

Once all the steps have been followed, the snails are ready to serve and enjoy!
